La noche (2021) White Wine

100% Chardonnay from a vineyard planted in 2016 over the famous "albariza de barajuelas" soils, northwest facing in Sanlúcar de Barrameda.

Hand harvested, lightly crushed by foot, maceration with skins for 24 hours, pressing, fermentation of the juice with native yeasts in a Carles Llarch vat of high permeability blonde clay. 5 months in the same vat with its total lees, plus 8 weeks in Amontillado barrels.

It aims to be an energetic and upright Chardonnay with depth and a stark character. The high level of permeability of the blonde clay gives the wine a slight oxidative character and at the same time a unique glyceric texture that seeks to balance the electric acidity of "La Noche."
